Low FODMAP and Keto Turkey Meatloaf

Sometimes you want meatloaf! But you want healthier meatloaf.

Ingredients

  • 1 tbsp onion infused oil
  • 2 bock choy chopped
  • 1 stalk celery chopped
  • 1 tsp hing
  • 1 tsp dried oregano
  • 1 tsp low FODMAP chili powder
  • 2 lb ground turkey
  • 1 cup shredded cheddar
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan
  • 2 eggs
  • 1 tbsp gluten free soy sauce
  • Kosher salt
  • Freshly ground black pepper

Instructions

  • Preheat oven to 400°.
  • Grease a medium baking dish with cooking spray.
  • In a medium skillet over medium heat, heat onion oil. Add bok choy and celery and cook until soft, 5 minutes.
  • Stir in hing, oregano, and chili powder and cook until fragrant, 1 minute. Let mixture cool slightly.
  • In a large bowl, combine ground beef, vegetable mixture, cheese, almond flour, Parmesan, eggs, soy sauce, and season with salt and pepper.
  • Shape into a large loaf in baking dish.
  • Turkey is cooked through, about 1 hour.
  • Serve it up! Don't forget to server with gluten free ketchup!

    The recipe is delicious, thank you. I did everything per the recipe except left out the hing just because I didn’t have any. Everyone in our family loved it.

  2. Totally Broke the rules and added ketchup. (Yup no longer KETO) but I think it was worth it. Totally loved this recipe.(Even if it’s no longer keto).

    I used 1 pound hamburger with 1 pound of turkey. This is something I just have always done with my meatloaf so it’s moister vs. dry. Turned out great, will for sure make it again.

  4. This is not a low fodmap recipe unless you’ve been cleared for onions, which can be exceedingly problematic for people with IBS

    1. Actually, onion infused oil is safe.(FODMAP app rates it as green) This is the reason it was used to replace onion. FODMAPS are not oil soluble but are water soluble. I agree that you need to be careful how you make the infused onion oil.
